Knock knock.

Who's there?

Banana.

Banana who?  

Banana bread. As in Dan's unbelievably tasty banana bread!

I love baking, but with the summer heat it's the last thing that I want to do....nobody likes a hot muggy kitchen - least of all me. That said, yesterday afternoon I was sitting in my office at work and couldn't stop thinking about how great a slice of banana bread would be....

As you can see, I couldn't get it off my mind and ended up baking a loaf last night.


I've been following the same basic recipe for years, adapting it as time has gone on and am more than happy to share it with you!

Dan's Banana Bread

1/2 cup butter
1 cup granulated sugar
2 eggs
1 cup mashed bananas (very ripe)
1 cup white flour
3/4 cup whole wheat flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 cup chopped walnuts
1 cup semi-sweet chocolate chips (optional....but why would you leave them out?)

Cream butter and sugar together. Beat in adds, one at a time. Beat until smooth, add mashed bananas and blend in.

In a second bowl you'll want to mix flour, baking soda, baking powder, salt, walnuts and chocolate chips together. Toss the banana mixture in with the dry ingredients, stirring only to moisten. Transfer to a 9x5 inch loaf pan.

Bake at 350F (180C) for about an hour or until an inserted knife or toothpick come out clean. Let stand for a couple of minutes and then dig in!

  1. Nom nom nom! I'm totally going to do that next time I make a loaf! If a recipe suggests a teaspoon of cinnamon I tend to throw a tablespoon in...you can never have too much cinnamon :) I also accept your challenge with the dark chocolate! You should come help me devour it!
